Moussaka

This is a Greek meat pie. I made It for Easter this year and my husband couldn't stop eating it!
It was delicious.

Here is what you will need to get started.

Chop onions, carrots, and garlic.

Heat olive oil in a pan then add onion and saute for a few minutes.

Add garlic let cook for a minute or just until they get a little bit of color.

Add the carrots to the pan and saute for a few minutes.

Move all of the vegetables to the outer edges of the pan.

Add the ground beef.

Add nutmeg, cinnamon, and the bay leaf while you are browning the meat.

Once the meat is browned add the red wine.

Stir in the kale and turn off the heat.

Grate fresh parmigiano-reggiano

Separate eggs and add the yolks to the parmigiano-reggiano . Whisk together.

Heat a pan and add butter.

Once the butter has melted whisk in the flour.

Once the flour has browned a bit whisk in the milk let cook for a few minutes whisking constantly. Now remove from heat.

Take a big spoonful of the sauce and whisk it into the egg mixture then repeat once more.

Now slowly whisk in the egg mixture until well mixed.

Add the meat mixture to a baking dish.

Pour the egg mixture on top of the meat and bake.

Stuffed French Toast

Getting started

Gather all your ingredients.

Add cream cheese, sugar, and vanilla into a bowl.

Mix together with a whisk until smooth.

Zest the orange into the mixture. Then stir in the zest with a spoon not the whisk. if you use the whisk all of the zest will stick to the wires!

In a flat shallow bowl crack eggs, add Cinnamon, and whisk together.

Next whisk in milk.

Slather two pieces of bread with the cream cheese mixture. Next stick those two pieces
 together like a sandwich.

Heat a pan and melt butter.

Dip each side of the bread in to the egg mixture for a few seconds to let it absorb some of the eggs.

Cook until golden brown on each side.

Top with your favorite toppings. My husband likes his french toast with peanut butter maple syrup and fresh berries. I on the other hand am a bit more simplistic in this instance I like butter and fresh raspberries with maybe a touch of powder sugar.

Gluten Free "Granola" Bars

These are energy and nutrient rich bars that taste of cherry and chocolate. Yumm!

Here is what you will need to get started  To give them a little more texture I add a 1/2 cup of old fashioned oats. I left them out this time to make them Gluten Free.

Add the dates to the food processor and process until the dates form a paste type ball.

Next add the cocoa powder, cinnamon, vanilla, and salt. Pulse until the mixture blends together.

Next add the chia seeds, and flax seeds. Process until the texture of corn meal.

Now add the walnuts, almonds, and cherries. Process to your desired consistency.

Dump the mixture out onto wax paper. Form into a rectangle and roll out until 1/4 inch thick.

Cut in half and put them in plastic food saver bags. Put them in the refrigerator over night. you could also put them on a sheet pan and cover with plastic wrap,

Trim the edges and cut into bars, size of your choice. I like to store mine in the fridge but the are good at room temp as well.

Enjoy!
